Baked Aubergine With Tomatoes

Baked aubergine rounds with cherry tomatoes, served cold

Aubergine rounds baked until meltingly soft, then cooled and topped with finely chopped cherry tomatoes, olive oil and basil. A very simple summer cold dish.
